For 4 people
4-5 Potatoes, boiled, cooled. Cut to small cubes.
3 Eggs- Boiled, cooled and smashed with fork.
2 Breast of chicken- Cooked, cooled and shredded.
10 Olives black or green- Cut lengthwise thin slices.
2-3 Sour pickled cucumber- Cut to very small cubes.
1/2 bag of frozen peas
1 Røme- Low fat sour cream
1 Pack of (2) Mayonnaise
Salt- one table spoon or to taste
Pepper- 1 tea spoon or to taste
Lemon Juice- 1/2 to 2/3 of a cup or to taste. Using lime gives better taste (use 2)
1/2 to 1 cup of Olive oil
Mix all ingredients very well – taste as you mix, add salt, pepper and lime.
Remember it should be tasting lemony and “olivy”, so add lime and olive oil to it.
Serving: it must be chilled
Serve as a side dish:
If serving for guests: Put the salad on a big dish, gather all in the center, work it to make a nice dome in the middle of the dish, smooth with a knife. Cover the whole thing with a layer of “Mayo” just like the way you cover a cake with frosting, so it would look like a shiny yellow half sun.
Cut few radishes in half or quarters or the design that you like and decorate your dome with red side up. Also, put some Parsley on or between the radishes for more contrast and taste. Decorate the rest of the plate with lettuce, tomatoes and pickles.
Serve as sandwiches:
Get yourself 2 slices of white bread, put a good chunk of the chemical waste that you just made with two slices of pickles.
